Emperor Deep Blue Palo Cortado Finish 40 is a unique experiment by the Mauritian brand. This island is fortunate to be able to produce both pure cane juice rums and molasses rums. Emperor has taken advantage of this to offer us this blend of 40% pure juice rum (aged 12 years) and 60% molasses rum (aged 5 to 7 years). The rums were blended and then put into old Palo Cortado sherry casks for a further 8 months.
And that’s where the experiment gets crazy, because once bottled, the rum was lowered to a depth of 60 metres in an underwater cellar off the coast of Brittany. For 10 months, in the dark, at a temperature of 10 to 13C, without oxygen and with 6 bars of pressure, the bottles of rum acquired a unique profile and appearance.
