Winemaker Description

The harvested grapes are carefully sorted in the winery. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily pigeage, warm maceration. Aged for 12 months in oak barrels, of which 1/3 new, malolactic fermentation in barrels, then assembly in stainless steel tanks for 3 months. Light filtration to bring more clarity and aromatic purity.

Tasting Notes: Ruby-purple color with mauve gleams, aroma of blackberries, redcurrant, cherry stone. A feline and wild evolution is not uncommon over time. Orientation towards leather, chocolate, pepper. A wine to be allowed to age a little so that it opens fully. Wine for laying down.

That fruit attains blueberry and forest aromas on the tight and firm palate that is spanned by taut tannins and pervaded by freshness. Vivid, slightly boisterous energy fills mouth and mind.
